Salmon!!

Michael went fishing this past weekend.  I was gone all last week at a conference and I was a little upset that he was going to be gone for my birthday weekend.  Not that we were going to do anything, but still!

He brought home a 20 pounder.

Michael also brought home 2 smaller fish. 

Do you have a hard time getting your lover or kids to smile in pictures?  Michael never smiles – I had to practically beg him to smile in these pictures!  What do you do to get smiles?

The 3 salmon!  He also got some cod which were already filleted when he brought them home so I didn’t take a picture.  This made up for not being home this past weekend!

Our freezer is now full of fresh fish!  Salmon steaks, filets, and cod filets (not pictured).  Gosh I love being married to a hunter and fisherman! 

How should I cook the salmon?  I have never cooked salmon before, so I NEED your help!!

Just Fishin'

 This weekend was a busy one!  We went zip lining with Michael's mom and sister on Saturday then at the last minute we decided to go fishing on Sunday.  We drove up to Jackson Meadows and went fishing at this beautiful lake.

 We moved spots since the fish quit biting.  Another amazing view!

 The water on the lake was rough when we got there, but it really calmed down by the end of the day.  It was really peaceful.

But, that's ok - it was still fun and nice to hang out with Michael for the day.

Breaded Cod

The boyfriend went fishing in Fort Bragg and came home with lots of cod.  So, we decided to freeze most of it and fry some up for dinner.  My mom came over and helped so all I had to do was take pictures and enjoy the food - that is my kind of cooking!!

Slice the cod (we used 4 fillets) into bite sized pieces.

Dip in egg mixture.

Dip in bread crumb mixture (or flour mixture).

Get pan with oil hot.

Drop breaded cod in hot oil. 

Turn. Repeat until all the cod is cooked.

Yum!
We made two types of breading - bread crumbs and seasoning (on the left) and flour and seasoning (on the right).  We liked the flour mixture more than the bread crumb mixture. 

That was it!  Pretty simple and make for a quick dinner!
